In the heart of Anatolia, Cappadocia is a plateau of volcanic tuff that erosion has carved into fairy chimneys and that people have hollowed out for centuries: Byzantine churches painted with frescoes, cave villages, underground cities on several levels. The Göreme National Park and the Rock Sites of Cappadocia have been a UNESCO World Heritage Site since 1985.
This guide covers the eight visits that matter: the balloon lift-off over Göreme, the Göreme Open Air Museum, the underground cities of Derinkuyu and Kaymaklı, the Love, Rose and Red valleys, Zelve, Uçhisar Castle, the Ihlara valley and the potteries of Avanos. Entry rules, access and tips are current as of September 2026.
Overview
With its fairy chimneys, its churches and cities carved into the tuff and its sunrise balloon flights, UNESCO-listed Cappadocia offers one of the most unreal landscapes in Turkey.
In the heart of Anatolia, Cappadocia unfolds a landscape shaped by volcanoes: pale-tuff 'fairy chimneys' sculpted by erosion, and a whole world carved into the rock — rock-cut churches with Byzantine frescoes, underground cities, cave dwellings. The Göreme National Park and the Rock Sites of Cappadocia have been a UNESCO World Heritage Site since 1985.
You come for the spectacle of hundreds of balloons at sunrise, hikes through the pink valleys, the descent into the underground cities of Derinkuyu or Kaymaklı, and nights in cave hotels. Three to four days capture the essentials, ideally in spring or autumn.

Göreme, the balloon lift-off
On each flying morning, around a hundred balloons take off before dawn from the fields around Göreme and drift for about an hour over the Love, Rose and Red valleys, between 100 and 800 metres up. Flights happen at sunrise because the valley winds are at their most stable; Turkey's civil aviation authority (SHGM) grants or refuses take-off permission every day, and a fair share of mornings are cancelled for wind.
Even without flying, the show can be watched from the hotel terraces in Göreme, Sunset Point above the village or the rim of Love Valley. Flights are booked with licensed operators, with a hotel shuttle at about 4.30am and a light breakfast before take-off.
Göreme Open Air Museum
A 1.5 km walk from the village, the Göreme Open Air Museum gathers the rock-cut churches and monasteries carved between the 10th and 12th centuries by the valley's monastic communities: Tokalı Kilise, the largest, the Apple Church (Elmalı), Saint Barbara, the Snake Church (Yılanlı), the Sandal Church (Çarıklı) and the Nuns' Monastery. Their Byzantine frescoes tell the life of Christ on a lapis-blue background, in varying states of preservation from chapel to chapel.
The Dark Church (Karanlık Kilise), whose frescoes are the best preserved on the site thanks to the lack of light, is visited with a separate ticket. The site, run by the Turkish Ministry of Culture and Tourism, is open daily from 8am to 6.45pm, with night opening from 7pm to 11pm; entry is charged and covered by the residents' Müze Kart. Allow 1.5 to 2 hours.
Underground cities of Derinkuyu and Kaymaklı
Carved into the tuff since antiquity and enlarged in Byzantine times as shelter from raids, the underground cities of Cappadocia are a maze of galleries, ventilation shafts, stables, wine presses and chapels. Derinkuyu, 30 km south of Göreme, goes down eight open levels to about 60 metres and could have sheltered thousands of people with their livestock; heavy millstone-shaped stone doors sealed the passages from inside.
Kaymaklı, 10 km further north, is wider and shallower, so easier to walk through. Both belong to the UNESCO property and are visited with a paid Ministry of Culture ticket; the green tours include one of them, usually Derinkuyu.
Uçhisar Castle
Visible from afar, Uçhisar Castle is a huge tuff outcrop, some sixty metres high, riddled with rooms, tunnels and dovecotes, which served as a fortified refuge and lookout. Perched at about 1,270 metres, it is the highest point in tourist Cappadocia: from the top, the panorama takes in the valleys, Göreme and, on a clear day, snow-capped Mount Erciyes.
The village of Uçhisar, 5 km from Göreme at the end of Pigeon Valley, has the region's finest cave hotels and plenty of terraces; it is also the start or end point of the Pigeon Valley walk.
Love, Rose and Red valleys
Around Göreme, a network of eroded valleys can each be walked in half a day. Love Valley (Bağlıdere), to the north-west, lines up the tallest fairy chimneys in the region, up to 40 metres; Rose Valley (Güllüdere) and Red Valley (Kızılçukur), between Göreme and Çavuşin, owe their names to the pink and ochre tuff that blazes at sunset, with hidden rock churches such as the Church of the Cross and the Columned Church.
To the south, Pigeon Valley (Güvercinlik) links Göreme to Uçhisar in 4 km between cliffs pierced with dovecotes, and Devrent ('Imagination') Valley shows off its animal-shaped rocks. The trails are free to access and sparsely marked; the Red Valley viewpoints and Sunset Point are the evening meeting places.
Zelve Open Air Museum and Paşabağ
Tucked into three valleys north of Göreme, the Zelve Open Air Museum was first a rock-cut monastic complex, then a cave village inhabited until 1952, when the risk of rockfalls forced its residents to leave. Opened as a museum in 1967, it is explored along a network of paths linking dwellings, mills, a mosque and chapels carved into the rock; wilder and less crowded than Göreme.
2 km away, the Paşabağ valley ('the pasha's vineyard') lines up the most photographed multi-headed fairy chimneys in Cappadocia, one of which holds the hermit chapel of Saint Simeon. The two sites form a single complex run by the Ministry of Culture, with a paid ticket.
Avanos and its potteries
Avanos, 12 km north of Göreme, stretches along the Kızılırmak, the 'Red River', Turkey's longest. Since Hittite times the river's red clay has been thrown here: pottery workshops fill the cellars and courtyards of the old town, and many offer a go at the potter's wheel, free and with no obligation to buy. The Güray ceramics museum, laid out underground, displays pieces from the Bronze Age to today.
The town is also known for its hand-knotted rugs and kilims, onyx and jewellery; a pedestrian suspension bridge crosses the river, and the banks make a pleasant late-afternoon stroll.
Ihlara Valley
80 km south-west of Göreme, the Ihlara valley is a 14 km canyon, about a hundred metres deep, cut through the tuff by the Melendiz river at the foot of the Hasan volcano. Unlike the arid valleys of Göreme, it is green: poplars, gardens and a river that flows all year. Its walls hold around a hundred rock churches from the 6th to 13th centuries, a dozen of which can be visited (Ağaçaltı, Yılanlı, Sümbüllü, Kokar).
The trail follows the river from Ihlara village to Belisırma (4 km, where restaurants sit with their feet in the water), then on to Selime Monastery, carved into the cliff. The valley is entered by a 360-step staircase at Ihlara; the site is ticketed. Green tours spend most of the day here.
Sunrise balloon flight over Göreme

Getting there
Two airports serve the region: Nevşehir Kapadokya (NAV, ~35 km from Göreme) and Kayseri (ASR, ~1h). Direct flights from Istanbul (~1h30).
Cappadocia is most easily reached by air from Istanbul (~1h30 flight). Two airports serve it: Nevşehir Kapadokya (NAV), about 35 km from Göreme (30-40 min by road), and Kayseri Erkilet (ASR), a little further (~1h). Shuttles link the airports to the villages (Göreme, Ürgüp, Uçhisar).
Many travellers combine Cappadocia with Istanbul. From Antalya and the coast, allow a long day by bus or a flight via Istanbul. On the ground, a rental car or organised tours link the scattered sites (underground cities, Avanos, valleys).
Getting around
The sites are spread over 30 to 80 km: rental car, organised tours (red and green) or taxis. Local minibuses link Göreme to Ürgüp, Avanos, Uçhisar and Nevşehir; the nearby valleys are walked.
The sites are scattered: Göreme is the hub, Uçhisar 5 km away, Avanos 12 km, Derinkuyu 30 km and Ihlara 80 km. A rental car (agencies in Göreme, Ürgüp and at the airports) gives the most freedom; roads are good and parking easy. Without a car, the red and green tours cover the essentials in two days, with hotel pick-up.
Minibuses (dolmuş) link Göreme to Nevşehir, Ürgüp, Avanos and Uçhisar during the day for a few dozen lira; taxis are negotiated or booked through an app. The Love, Rose and Pigeon valleys start on foot from Göreme; scooters and e-bikes can be rented in the village. Shuttles from Nevşehir airport (35 km, 30-40 min) and Kayseri (75 km) are booked in advance through hotels or transfer companies.
What to do
A sunrise balloon flight, the Göreme Open Air Museum, an underground city, a sunset walk in Rose Valley, Uçhisar for the panorama and, with one more day, the Ihlara valley.
Spend the first morning in the air or on a terrace watching the balloons, then at the Göreme Open Air Museum before the crowds. In the afternoon, climb to Uçhisar Castle via Pigeon Valley and end at the Red Valley viewpoint for sunset. On day two, the green tour strings together Derinkuyu, the Ihlara valley and Selime; the red tour covers Uçhisar, Paşabağ, Zelve, Devrent, Avanos and Love Valley.
With a third day, walk Love or Rose Valley on your own, try the potter's wheel in Avanos or a sunset horse ride. Many travellers combine Cappadocia with Istanbul (a 1.5-hour flight) or the Antalya coast.
Food
Testi kebab (a stew cooked in a clay pot broken at the table), mantı (dumplings with yoghurt), gözleme and Cappadocian wines, made in Ürgüp and Avanos since antiquity.
The signature dish is testi kebab: a beef or lamb stew with vegetables, cooked for hours in a sealed Avanos clay jar that the waiter breaks in front of you. It often has to be ordered in advance. Mantı, tiny dumplings topped with garlic yoghurt and chilli butter, and gözleme, a stuffed flatbread cooked on a griddle, are the safe bets for lunch.
The region is one of Turkey's oldest wine areas: the cellars of Ürgüp and Avanos pour Emir (white), a local grape, and Kalecik Karası (red), originally from the Ankara region. Finish with tea or Turkish coffee in Göreme's cave cafés, and try dried apricots and pekmez (grape molasses) at the markets.

Day 1: balloon flight at dawn, breakfast, then the Göreme Open Air Museum at opening. In the afternoon, walk Pigeon Valley to Uçhisar and climb the castle; sunset at the Red Valley viewpoint.
Day 2: green tour or car heading south: Derinkuyu in the morning, hike from Ihlara to Belisırma with lunch by the river, Selime Monastery, back via Nar lake.
Day 3: red tour (Uçhisar, Paşabağ, Zelve, Devrent, Avanos, Love Valley) or, on your own, Paşabağ and Zelve in the morning then Avanos; at the end of the day, Rose Valley on foot or on horseback until sunset. With a fourth day: Love Valley, Ürgüp and its wine cellars, or Mustafapaşa. Then move on to Istanbul.

What to do by season (autumn)
-
Hiking & nature
Mild temperatures, stable conditions.
When to go
Spring (April-June) and autumn (September-October) are ideal. Summer is hot, winter snowy and photogenic but balloon flights are cancelled more often.
Spring (April to June) and autumn (September to October) offer mild weather, perfect for hiking and balloon flights. These are the best seasons.
Summer (July-August): hot and dry, keep walks to morning and evening. Winter: snow on the fairy chimneys is spectacular, but balloon flights are cancelled more often due to weather. Whatever the season, balloons need calm conditions and can be cancelled at the last minute: plan buffer days.
Budget
Balloon aside, Cappadocia is affordable: red or green tours from €17-18 (lunch and entry fees optional), cave rooms from €50 to €80 in a guesthouse and €120 to €250 in a boutique hotel. The balloon flight, from €90 to over €250, is the main expense.
The balloon flight dominates the budget: from about €90 to over €250 per person depending on the operator and basket size (GetYourGuide 2026 prices). Guided tours are cheap: from €17 for the red tour and €18 for the green tour, lunch and site entry fees depending on the option. Tickets for the Ministry of Culture sites (Göreme, Derinkuyu, Zelve, Ihlara) are charged and priced in euros for foreign visitors; expect a few dozen euros for the lot.
A cave room costs €50 to €80 in a Göreme guesthouse and €120 to €250 in a boutique hotel in Uçhisar or Ürgüp with a valley-view terrace. Meals €5 to €15 per person, testi kebab around €15-20. Without the balloon, plan on €60 to €120 per person per day including the hotel; add the flight once. The Turkish lira is volatile: tourist prices are often displayed in euros.
Where to stay
Göreme to be at the centre of the sites and see the balloons on waking, Uçhisar and Ürgüp for more calm and charm. Sleeping in a cave hotel is an experience of its own.
Göreme is the handiest base: in the heart of the sites, lively, and ideal for watching the balloons take off from the terrace at dawn. Uçhisar, perched and quieter, offers the finest panoramas and upscale hotels; Ürgüp charms with its historic centre and wine cellars.
The great regional speciality is the cave hotels set in former dwellings carved into the tuff: stone vaults, natural coolness and local decor. Book early in high season, especially valley-view rooms for the balloon spectacle.
Safety
Cappadocia is not in any area France Diplomatie advises against; normal vigilance applies. The risks are physical: unmarked trails, rockfalls at Zelve, summer heat. Single emergency number: 112.
Cappadocia is not among the areas France Diplomatie advises against; normal vigilance applies. In its update of 10 September 2026, the ministry reports fires in several localities in the south and west of the country and reminds travellers that the land border with Iran has been closed since 2 March 2026: follow local authorities' instructions and check the country page before departure.
On the ground, the risks are mostly physical: sparsely marked trails in the valleys (offline map, water, don't set off alone at nightfall), rockfalls at Zelve and on cliff paths, low passages in the underground cities, intense summer heat and winter snow. Balloon flights are regulated by the civil aviation authority (SHGM): fly only with a licensed operator. Single emergency number: 112. French citizens can register on Ariane before departure.
Formalities
French citizens enter visa-free for 90 days in any 180, with a passport or ID card valid at least 150 days after entry (passport recommended). Currency: the Turkish lira (TRY).
Turkey is in neither the Schengen area nor the European Union. For a tourist stay, French citizens are exempt from a visa for 90 days in any 180-day period, with no e-visa. Both the national ID card and the passport are accepted, but the document must be valid at least 150 days after the date of entry and in good condition; France Diplomatie recommends the passport, as ID cards issued between 2004 and 2013 and extended by five years can cause problems ('entry and stay' page updated 15 September 2026). Other nationalities should check their situation: some must obtain an e-Visa on the official portal evisa.gov.tr.
The currency is the Turkish lira (TRY), subject to high inflation: pay in lira rather than euros and refuse the conversion offered at the terminal. Cards are accepted in hotels, restaurants and official sites, less so in small workshops. Single emergency number: 112.
Tips
Book the balloon for your first morning with spare days, visit Göreme at opening, take a green tour for Ihlara, pay in Turkish lira and pack walking shoes, a head torch and a jacket for the underground cities.
- Balloon: book it for your first morning so it can be moved if the civil aviation authority cancels; plan at least three nights.
- Hours: the Göreme Open Air Museum opens at 8am; groups arrive mid-morning. Night opening (7pm-11pm) allows a quiet visit.
- Money: pay in Turkish lira (TRY) and refuse dynamic currency conversion at the terminal; official site tickets are displayed in euros for foreigners but paid in lira or by card.
- Gear: walking shoes, hat, water, a head torch to get back from the viewpoints, a jacket for the underground cities (13-15°C).
- Accommodation: ask for a valley-facing room or terrace in Göreme to see the balloons on waking.
- Combining: Istanbul is a 1.5-hour flight away; flights to Nevşehir and Kayseri sell out early in high season.
